Tender chicken breasts rolled up with feta, spinach, and sun-dried tomatoes for a flavor-packed, Mediterranean-inspired dinner.
Ingredients
2 chicken breasts, boneless and skinless
1 cup baby spinach, fresh
1/2 cup feta cheese, crumbled
1/4 cup sun-dried tomatoes, chopped
1 garlic clove, minced
1 tbsp olive oil
Salt and black pepper to taste
1/2 tsp paprika
1 tsp dried oregano
1 tbsp lemon juice
Instructions
1. Preheat oven to 375°F (190°C).
2. Flatten chicken breasts to 1/2-inch thickness.
3. Mix feta, spinach, sun-dried tomatoes, and garlic in a bowl.
4. Spread mixture over chicken and roll tightly.
5. Secure with toothpicks and season with paprika and oregano.
6. Sear rolls in olive oil until golden.
7. Bake for 15–18 minutes until chicken reaches 165°F (74°C).
8. Rest for 5 minutes before slicing and serving.
Notes
You can prepare the rolls ahead and refrigerate for up to 12 hours.
For a creamier version, drizzle with Greek yogurt sauce before serving.
