A hearty casserole with the bold flavors of salsa verde and tender shredded chicken layered with cheese and tortillas.


Ingredients

  • 2 cups cooked shredded chicken (rotisserie recommended)
  • 1 cup sour cream
  • 0.75 cup salsa verde
  • 8 small corn tortillas (6-inch)
  • 2 cups chopped tomatoes
  • 2 cups shredded Pepper Jack or Monterey Jack cheese
  • 0.25 cup fresh cilantro, chopped
  • Avocado slices (for garnish)
  • Green onions (for garnish)
  • Lime wedges (for garnish)
  • Extra salsa (optional toppings)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare an 8×8-inch or 9×9-inch baking dish by lightly greasing it.
  3. Mix together 1 cup of sour cream and 0.75 cups of salsa verde until smooth.
  4. Prep 4 corn tortillas by quickly dipping them in cool water.
  5. Layer the dipped tortillas in the bottom of the prepared baking dish.
  6. Build the layers by spreading half of the sauce, then adding half of the chicken, tomatoes, cilantro, and cheese.
  7. Repeat the layering process with the remaining ingredients.
  8. Bake in the oven for 20-25 minutes until hot and bubbly.
  9. Rest for about 5 minutes before serving.
  10. Garnish with avocado slices, lime wedges, green onions, and extra salsa.
