- 2 tortillas
- 1 cup cooked chicken, shredded
- 1 cup cheese (cheddar or Mexican blend), shredded
- 1/2 cup bell peppers, sliced
- 1/4 cup onion, sliced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sour cream (for serving)
- Salsa (for serving)
Instructions
- Prep the ingredients: Make sure all your ingredients are ready, shredding your cooked chicken if necessary, and slicing the bell peppers and onions.
- Heat the skillet: Place a skillet over medium heat and add olive oil until it shimmers.
- Cook the vegetables: Sauté sliced onions and bell peppers for about 3–4 minutes until softened.
- Season the chicken: Mix shredded chicken with salt and pepper in a separate bowl.
- Assemble the quesadilla: Place one tortilla in the skillet, layer half the cheese, then the chicken mixture and cooked vegetables, finishing with the remaining cheese and topping with the second tortilla.
- Cook the quesadilla: Cook on each side for 3–4 minutes until golden brown and the cheese melts.
- Slice and serve: Remove from skillet, allow to cool, then cut into wedges.
- Garnish and enjoy: Serve hot with sour cream and salsa.
Notes
Use fresh ingredients for the best flavor. Can be customized with different fillings.
