Description

Quick and easy chicken quesadillas packed with flavor and customizable to your taste.


Ingredients

  • 2 tortillas
  • 1 cup cooked chicken, shredded
  • 1 cup cheese (cheddar or Mexican blend), shredded
  • 1/2 cup bell peppers, sliced
  • 1/4 cup onion, sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream (for serving)
  • Salsa (for serving)

Instructions

  1. Prep the ingredients: Make sure all your ingredients are ready, shredding your cooked chicken if necessary, and slicing the bell peppers and onions.
  2. Heat the skillet: Place a skillet over medium heat and add olive oil until it shimmers.
  3. Cook the vegetables: Sauté sliced onions and bell peppers for about 3–4 minutes until softened.
  4. Season the chicken: Mix shredded chicken with salt and pepper in a separate bowl.
  5. Assemble the quesadilla: Place one tortilla in the skillet, layer half the cheese, then the chicken mixture and cooked vegetables, finishing with the remaining cheese and topping with the second tortilla.
  6. Cook the quesadilla: Cook on each side for 3–4 minutes until golden brown and the cheese melts.
  7. Slice and serve: Remove from skillet, allow to cool, then cut into wedges.
  8. Garnish and enjoy: Serve hot with sour cream and salsa.
