Ingredients
2 cups fresh spinach
1 tbsp olive oil
1 garlic clove, minced
4 large eggs
2 tbsp cream or milk
1/4 cup feta or mozzarella cheese
Salt and pepper to taste
Instructions
1. Preheat oven to 375°F (190°C).
2. Sauté spinach with olive oil and garlic for 2–3 minutes.
3. Spread spinach evenly into ramekins or a small baking dish.
4. Crack eggs on top of spinach.
5. Drizzle with cream and sprinkle with cheese.
6. Bake uncovered for 10–12 minutes or until whites are set.
7. Let rest for 2 minutes before serving.
Notes
You can use frozen spinach (thawed and drained).
Top with fresh herbs for added flavor.
Best served warm with toasted bread.
