Instructions
1. Heat olive oil in a large skillet over medium-low heat. Add sliced onions with a pinch of salt and cook slowly for 25-30 minutes, stirring occasionally, until deep golden and caramelized.
2. Transfer caramelized onions to a plate and let cool slightly.
3. Remove sausage from casings and pat dry with paper towels.
4. In a bowl, combine sausage meat, caramelized onions, garlic powder, black pepper, and thyme. Let rest for 15-20 minutes.
5. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
6. On a lightly floured surface, roll out thawed puff pastry sheets to smooth any creases.
7. Spread the sausage-onion mixture evenly down the center of each pastry sheet, leaving about 1 inch on each side.
8. Roll the pastry tightly around the filling to create a log shape. Seal the seam by pressing gently.
9. Slice each log into 1-inch pieces (8-10 rolls per sheet).
10. Place rolls seam-side down on the prepared baking sheet, spacing them 2 inches apart.
11. Brush tops with beaten egg for extra shine (optional).
12. Bake for 22-25 minutes until golden and puffed.
13. Check internal temperature: 165°F for chicken sausage, 160°F for beef sausage.
14. Let rolls rest for 5 minutes before serving.
