Ingredients
1 lb ground chicken (thighs or mix)
2 cloves garlic, minced
1 tsp oregano
1 tbsp parsley, chopped
½ tsp dill
1 egg
½ cup breadcrumbs
Salt & pepper
1 tbsp olive oil
1 cup orzo pasta
2 cups chicken broth
1 lemon (juice & zest)
2 tbsp Greek yogurt
Instructions
1. Preheat oven to 400°F (200°C).
2. Mix all meatball ingredients in a bowl.
3. Shape into small meatballs and chill for 10 minutes.
4. Sear in skillet until golden.
5. Bake for 10–12 minutes until cooked through.
6. Cook orzo in chicken broth until tender.
7. Stir in lemon juice, zest, and yogurt.
8. Serve meatballs over lemon orzo and garnish with parsley.
Notes
For extra flavor, marinate the meatball mixture for 15 minutes.
You can substitute ground turkey for chicken.
Store leftovers in an airtight container for up to 3 days.
