Ingredients

  • 1 pound of skinless chicken breast, chopped into bite-size pieces
  • 2 cups of fresh spinach, chopped
  • 1 cup of quinoa
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Prepare quinoa: Start by rinsing the quinoa under cold water. In a medium-sized pot, add 2 cups of water and bring it to a boil. Add the rinsed quinoa and a pinch of salt. Reduce the heat to low, cover, and let it simmer for 15 minutes or until all the water is absorbed. Remove from heat and fluff with a fork.
  2. Cook chicken: In a large pan, heat the olive oil over medium heat. Add the chopped onions and sauté for about 3-4 minutes or until they are translucent. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add chicken to the pan: Add the chicken pieces to the pan. Season with paprika, salt, and pepper. Cook for about 10-12 minutes, stirring occasionally so the chicken is evenly cooked and no longer pink.
  4. Incorporate spinach: Once the chicken is fully cooked, add the chopped spinach to the pan. Stir well, cooking for an additional 2-3 minutes until the spinach wilts down.
  5. Mix in quinoa: Finally, add the cooked quinoa to the pan. Squeeze the lemon juice over the mixture and stir everything together until well combined.
  6. Serve: Remove from heat and let it cool for a few minutes before serving.
