Description

Ingredients

4 cups corn kernels (fresh or frozen)

2 medium potatoes, diced

1 onion, chopped

2 celery stalks, diced

2 carrots, sliced

3 cups vegetable broth

1 cup milk or cream

2 tbsp butter

2 cloves garlic, minced

Salt and pepper to taste


Instructions

1. Add all vegetables, broth, butter, garlic, salt, and pepper to the slow cooker.

2. Stir, cover, and cook on LOW for 6–7 hours or HIGH for 3–4 hours.

3. Stir in milk or cream before serving and mash a few potatoes to thicken.

4. Let rest for 5 minutes before serving.

Notes
