- 2 lbs chicken thighs
- 1 cup peanut butter
- 1 cup soy sauce
- 1/2 cup honey
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/2 teaspoon crushed red pepper flakes
- 1 cup chicken broth
- 1 tablespoon lime juice
- Salt and pepper to taste
- Chopped peanuts for garnish
- Chopped green onions for garnish
Instructions
- Prepare the sauce by combining peanut butter, soy sauce, honey, garlic, ginger, and red pepper flakes in the slow cooker.
- Add the chicken thighs and coat them well with the peanut sauce.
- Set the slow cooker to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
- Shred the chicken in the sauce using two forks once it’s tender.
- Season with salt and pepper to taste.
- Garnish and serve the dish over rice or noodles with chopped peanuts and green onions.
