Description

A tasty and easy-to-make dish with tender chicken in a creamy peanut sauce, perfect for busy weeknights or entertaining.


Ingredients

  • 2 lbs chicken thighs
  • 1 cup peanut butter
  • 1 cup soy sauce
  • 1/2 cup honey
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1 cup chicken broth
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Chopped peanuts for garnish
  • Chopped green onions for garnish

Instructions

  1. Prepare the sauce by combining peanut butter, soy sauce, honey, garlic, ginger, and red pepper flakes in the slow cooker.
  2. Add the chicken thighs and coat them well with the peanut sauce.
  3. Set the slow cooker to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  4. Shred the chicken in the sauce using two forks once it’s tender.
  5. Season with salt and pepper to taste.
  6. Garnish and serve the dish over rice or noodles with chopped peanuts and green onions.
