- 1 pound lean ground beef

- Homemade sauce:
- 2 tablespoons mayonnaise
- 1 tablespoon pickle relish
- 1 teaspoon Dijon mustard
- 1 teaspoon sugar
- 1 teaspoon white vinegar
- 1/4 teaspoon paprika
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
Instructions
- Prepare the Ground Beef: Start by dividing the pound of ground beef into four equal portions. Shape them loosely into balls, being careful not to pack them too tightly. Each portion should weigh about 4 ounces.
- Season the Beef: Take each beef ball and season them lightly with salt and pepper.
- Heat the Skillet: Put a skillet or frying pan on the stove over medium-high heat. Add a tablespoon of neutral oil and let it heat up.
- Cook the Tortillas: Place a tortilla in the pan. Immediately place one of the beef balls on top of the tortilla. Smash the beef ball flat directly onto the tortilla.
- Sear the Beef: Allow the beef to cook without moving it for about 2-3 minutes until it becomes golden brown and crispy.
- Add Cheese: After flipping the tortilla beef-side up, place a slice of cheese on top of the cooked beef. Let it cook for an additional 1-3 minutes until the cheese melts.
- Repeat: Remove the cooked taco from the skillet and place it on a serving plate. Repeat the cooking process with the remaining tortillas and beef portions.
- Make the Sauce: Mix together the homemade sauce in a small bowl: combine mayonnaise, pickle relish, Dijon mustard, sugar, white vinegar, paprika, onion powder, and garlic powder.
- Assemble the Tacos: Spread a generous amount of the homemade sauce over each taco. Top with shredded lettuce, diced onion, and dill pickle chips.
