Ingredients

  • 2 pounds potatoes
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 small onion, finely chopped
  • 2 green onions, sliced
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Boil the potatoes by washing them and placing them in a pot with salted water. Bring to a boil and simmer until tender.
  2. Drain the cooked potatoes and let them cool.
  3. Peel the potatoes and chop them into bite-sized cubes.
  4. Prepare the dressing by mixing sour cream, mayonnaise, onion, green onions, and Dijon mustard in a bowl.
  5. Fold the chopped potatoes into the dressing carefully.
  6. Season with salt and pepper to taste.
  7. Chill the salad in the refrigerator for at least 1 hour before serving.
  8. Garnish with fresh parsley before serving, if desired.

Notes

For optimal flavor, chill overnight. Adding bacon bits or fresh herbs can enhance the taste.
