- 2 pounds potatoes
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 small onion, finely chopped
- 2 green onions, sliced
- 1 tablespoon Dijon mustard
- Salt and pepper to taste

Instructions
- Boil the potatoes by washing them and placing them in a pot with salted water. Bring to a boil and simmer until tender.
- Drain the cooked potatoes and let them cool.
- Peel the potatoes and chop them into bite-sized cubes.
- Prepare the dressing by mixing sour cream, mayonnaise, onion, green onions, and Dijon mustard in a bowl.
- Fold the chopped potatoes into the dressing carefully.
- Season with salt and pepper to taste.
- Chill the salad in the refrigerator for at least 1 hour before serving.
- Garnish with fresh parsley before serving, if desired.
Notes
