Description
Crispy, cheesy, and packed with jalapeño heat, these cornbread waffles are perfect for brunch or a snack.
Ingredients
1 cup cornmeal
1 cup all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp sugar
1 cup buttermilk
2 large eggs
1/4 cup melted butter
1 cup shredded sharp cheddar
2–3 finely chopped jalapeños (seeds removed)
Butter for waffle iron
Instructions
1. Preheat waffle iron and grease with butter.
2. Mix dry ingredients in a bowl.
3. Whisk wet ingredients in another bowl.
4. Combine wet and dry ingredients; fold in cheddar and jalapeños.
5. Pour batter into waffle iron; cook 4-6 minutes until golden.
6. Rest waffles 2 minutes before serving.
Notes
Optional: Serve with honey or maple syrup.
Substitute almond flour for a keto-friendly option.
Adjust jalapeño quantity for preferred spice level.
