Ingredients

  • 1/2 cup sugar
  • 1/2 cup butter, melted
  • 4 packages (8 ounces each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 2 cups fresh strawberries, sliced
  • 1/4 cup sugar (for topping)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Prepare the crust by combining graham cracker crumbs, 1/2 cup of sugar, and melted butter in a mixing bowl, then press into a 9-inch springform pan.
  3. Mix the filling by beating the softened cream cheese until smooth, then add 1 cup of sugar and vanilla extract, mixing until fluffy.
  4. Add the eggs one at a time, mixing on low speed just until blended.
  5. Combine the crust and filling by pouring the cheesecake filling over the crust and smoothing the top.
  6. Bake in the preheated oven for about 60 minutes, until the center is set but slightly jiggly.
  7. Cool the cheesecake in the pan after baking to prevent cracks.
  8. Prepare the strawberry topping by mixing sliced strawberries with 1/4 cup of sugar and lemon juice.
  9. Top the cooled cheesecake with the strawberry mixture evenly spread on top.
  10. Refrigerate for at least 4 hours or overnight before serving.
