- 1/4 cup sugar (for topping)
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (160°C).
- Prepare the crust by combining graham cracker crumbs, 1/2 cup of sugar, and melted butter in a mixing bowl, then press into a 9-inch springform pan.
- Mix the filling by beating the softened cream cheese until smooth, then add 1 cup of sugar and vanilla extract, mixing until fluffy.
- Add the eggs one at a time, mixing on low speed just until blended.
- Combine the crust and filling by pouring the cheesecake filling over the crust and smoothing the top.
- Bake in the preheated oven for about 60 minutes, until the center is set but slightly jiggly.
- Cool the cheesecake in the pan after baking to prevent cracks.
- Prepare the strawberry topping by mixing sliced strawberries with 1/4 cup of sugar and lemon juice.
- Top the cooled cheesecake with the strawberry mixture evenly spread on top.
- Refrigerate for at least 4 hours or overnight before serving.
