Ingredients

  • Poblano peppers
  • Cheese (such as queso fresco or Monterey Jack)
  • Ground meat (optional)
  • 1 Onion
  • 3 cloves Garlic
  • 2 Eggs
  • 1/2 cup Flour
  • Salt to taste
  • Pepper to taste
  • Oil for frying
  • Tomato sauce (optional for serving)

Instructions

  1. Roast the Poblano Peppers over an open flame or in the oven until blistered.
  2. Steam and peel the peppers after roasting.
  3. Prepare the peppers by making a small slit and removing seeds.
  4. Sauté the onion and garlic in oil until soft.
  5. Add ground meat to skillet, cook until browned.
  6. Mix in cheese until melted.
  7. Stuff each pepper with the meat and cheese mixture.
  8. Prep the eggs in a bowl and season.
  9. Coat peppers in flour, then dip in egg mixture.
  10. Fry the peppers until golden brown on all sides.
  11. Serve with tomato sauce if desired.
