Instructions
- Roast the Poblano Peppers over an open flame or in the oven until blistered.
- Steam and peel the peppers after roasting.
- Prepare the peppers by making a small slit and removing seeds.
- Sauté the onion and garlic in oil until soft.
- Add ground meat to skillet, cook until browned.
- Mix in cheese until melted.
- Stuff each pepper with the meat and cheese mixture.
- Prep the eggs in a bowl and season.
- Coat peppers in flour, then dip in egg mixture.
- Fry the peppers until golden brown on all sides.
- Serve with tomato sauce if desired.
