Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix dry ingredients in a medium bowl: all-purpose flour, baking powder, baking soda, cinnamon, and salt.
  3. Cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add egg and vanilla extract to the mixture and beat until combined.
  5. Combine the dry mixture into the wet mixture and stir until just combined.
  6. Fold in grated carrots and chopped nuts.
  7. Scoop portions of dough onto a lined baking sheet, leaving space between each.
