Instructions
- Preheat the oven to 350°F (175°C).
- Mix dry ingredients in a medium bowl: all-purpose flour, baking powder, baking soda, cinnamon, and salt.
- Cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add egg and vanilla extract to the mixture and beat until combined.
- Combine the dry mixture into the wet mixture and stir until just combined.
- Fold in grated carrots and chopped nuts.
- Scoop portions of dough onto a lined baking sheet, leaving space between each.
- Bake for 10-12 minutes until edges are golden.
- Cool the cookies on a wire rack and frost with cream cheese frosting to sandwich them together.
