Ingredients
1 cup corn kernels
1/2 cup flour
1 egg
2 tbsp chopped green onions
1/4 cup shredded cheddar
Salt and pepper to taste
Olive oil for frying
4 sandwich buns
Optional: lettuce, tomato, Greek yogurt sauce
Instructions
1. Mix corn, flour, egg, and seasoning in a bowl.
2. Form small patties and let rest 5 minutes.
3. Heat olive oil and fry fritters 2–3 minutes per side.
4. Toast buns lightly.
5. Assemble sandwiches with fritters, lettuce, tomato, and sauce.
6. Serve warm and enjoy!
