Description

Ingredients
2 medium sweet potatoes
2 tbsp olive oil
1/3 cup crumbled feta cheese
2 tbsp honey
1 tbsp fresh herbs (parsley, thyme, or rosemary)
Salt and pepper to taste
Instructions
1. Preheat oven to 400°F (200°C).
2. Slice sweet potatoes into ½-inch rounds.
3. Brush with olive oil and season with salt and pepper.
4. Place on baking sheet and roast for 20–25 minutes, flipping halfway.
5. Remove from oven, let cool slightly.
6. Top with crumbled feta, drizzle with honey, and sprinkle with fresh herbs.
7. Serve warm and enjoy!
Notes
For extra crunch, add toasted nuts like walnuts or almonds.
Substitute goat cheese for feta for a creamier texture.
Use maple syrup instead of honey for a richer sweetness.
