Ingredients
2 lbs Yukon Gold or Russet potatoes
4 cloves garlic, minced
3 tbsp olive oil
1 tsp sea salt
1/2 tsp black pepper
1 tsp dried rosemary or thyme
Instructions
1. Preheat oven to 400°F (200°C).
2. Wash and cut potatoes into chunks.
3. Toss with garlic, oil, salt, pepper, and herbs.
4. Spread on baking sheet in single layer.
5. Roast 35–40 minutes, flipping halfway.
6. Rest 5 minutes before serving.
Notes
For a spicy twist, add chili flakes or smoked paprika.
Use fresh herbs for a brighter flavor.
