Ingredients
6–8 medium flour tortillas (8–10 inches)
1 cup marinara or pizza sauce
2 cups shredded mozzarella cheese
1/2 cup diced pepperoni (or toppings of choice)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon Italian seasoning
Optional: sliced bell peppers, mushrooms, olives, cooked sausage
Optional: grated Parmesan cheese for topping
Instructions
1. Preheat your oven to 375°F (190°C) or air fryer to 375°F. Line a baking tray with parchment paper.
2. In a small bowl, mix olive oil, garlic powder, and Italian seasoning. Set aside.
3. Lay tortillas flat on a clean work surface.
4. Spread 1-2 tablespoons of marinara sauce evenly on each tortilla, leaving a 1/2-inch border around the edges.
5. Sprinkle about 1/4 cup shredded mozzarella cheese over the sauce on each tortilla.
6. Add your desired toppings (pepperoni, vegetables, etc.), being careful not to overfill.
7. Roll up each tortilla tightly from one end, like a burrito, keeping the filling secure inside.
8. Place each roll seam-side down on the prepared baking tray.
9. Brush the tops of the rolls with the garlic-olive oil mixture.
10. Bake in the oven for 10-12 minutes, flipping halfway through for even browning, OR air fry for 8 minutes until golden brown and crispy.
11. Remove from oven when edges are crisp and cheese is bubbling slightly at the seams.
12. Let cool for 2 minutes before slicing each roll in half diagonally with a sharp knife or pizza cutter.
13. Serve warm with extra marinara sauce, ranch dressing, or garlic aioli for dipping.
Notes
Storage: Store cooled pizza rolls in an airtight container in the refrigerator for up to 3 days.
Reheating: Reheat in oven or air fryer at 350°F for 5-7 minutes to restore crispiness. Avoid microwaving as it makes them soggy.
Freezing: Freeze unbaked rolls on a baking sheet, then transfer to a freezer bag for up to 2 months. Bake from frozen, adding 3-4 extra minutes to cooking time.
Prevent Cracking: If tortillas crack when rolling, warm them in the microwave for 10-15 seconds wrapped in a damp paper towel.
Avoid Soggy Rolls: Don’t oversauce! Use only 1-2 tablespoons per tortilla and pat vegetable toppings dry before adding.
Customization: Try BBQ chicken, Mexican-style with salsa and cheddar, or white pizza with ricotta and spinach.
Make Ahead: Assemble rolls up to 4 hours ahead, cover, and refrigerate until ready to bake.
Kid-Friendly: Let kids customize their own rolls with their favorite toppings for a fun cooking activity.
