- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 cup crushed pineapple, drained
- 1/2 cup chopped walnuts or pecans (optional)
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Mix the flour, granulated sugar, baking soda, baking powder, ground cinnamon, and salt in a bowl.
- Combine the vegetable oil, eggs, grated carrots, drained pineapple, and vanilla extract in another bowl.
- Add the wet mixture to the dry ingredients and mix gently until just combined.
- Fold in the optional chopped nuts.
- Divide the batter evenly between the prepared cake pans.
- Bake for about 25-30 minutes, or until a toothpick inserted comes out clean.
- Cool the cakes for 10 minutes in the pans before transferring to wire racks to cool completely.
- Make the cream cheese frosting by beating the softened cream cheese and butter until smooth, then gradually mixing in the powdered sugar and vanilla extract.
- Frost the cooled cakes, layering and decorating as desired.
- Serve the cake slices and enjoy!

This cake can be made ahead of time and freezes well. Ensure also to let it cool completely before frosting.
