Description

A moist and flavorful carrot cake topped with rich cream cheese frosting, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Mix the flour, granulated sugar, baking soda, baking powder, ground cinnamon, and salt in a bowl.
  3. Combine the vegetable oil, eggs, grated carrots, drained pineapple, and vanilla extract in another bowl.
  4. Add the wet mixture to the dry ingredients and mix gently until just combined.
  5. Fold in the optional chopped nuts.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for about 25-30 minutes, or until a toothpick inserted comes out clean.
  8. Cool the cakes for 10 minutes in the pans before transferring to wire racks to cool completely.
  9. Make the cream cheese frosting by beating the softened cream cheese and butter until smooth, then gradually mixing in the powdered sugar and vanilla extract.
  10. Frost the cooled cakes, layering and decorating as desired.
  11. Serve the cake slices and enjoy!

Notes

This cake can be made ahead of time and freezes well. Ensure also to let it cool completely before frosting.
