Ingredients

- 1 lb lobster meat, cooked and chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup butter
- 1 cup onion, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1/2 cup frozen peas
- 1/4 cup all-purpose flour
- 1 tsp thyme
- Salt and pepper to taste
- 1 sheet of puff pastry or pie crust
Instructions
- Preheat your oven to 400°F (200°C).
- Sauté the vegetables in melted butter over medium heat for about 5-7 minutes.
- Sprinkle flour over the vegetables and stir, then gradually pour in cream and broth, stirring until thickened.
- Add the lobster, peas, thyme, and season with salt and pepper, mixing well.
- Pour the mixture into a pie dish, spreading evenly.
- Cover with puff pastry, sealing the edges, and cut slits for steam to escape.
- Bake for 25-30 minutes until the crust is golden brown.
- Cool slightly before serving.
