Description

A comforting and decadent lobster pot pie featuring a creamy filling with fresh vegetables and succulent lobster, all encased in a flaky pastry.


Ingredients

  • 1 lb lobster meat, cooked and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup butter
  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1/2 cup frozen peas
  • 1/4 cup all-purpose flour
  • 1 tsp thyme
  • Salt and pepper to taste
  • 1 sheet of puff pastry or pie crust

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté the vegetables in melted butter over medium heat for about 5-7 minutes.
  3. Sprinkle flour over the vegetables and stir, then gradually pour in cream and broth, stirring until thickened.
  4. Add the lobster, peas, thyme, and season with salt and pepper, mixing well.
  5. Pour the mixture into a pie dish, spreading evenly.
  6. Cover with puff pastry, sealing the edges, and cut slits for steam to escape.
  7. Bake for 25-30 minutes until the crust is golden brown.
  8. Cool slightly before serving.
