- 1 cup orzo pasta
- 4 cups low-sodium chicken broth
- 2 pieces fresh lemons (zest and juice)
- 3 cloves garlic (minced)
- 1 tsp dried oregano
- 2 tbsp olive oil (extra virgin)
- To taste salt
- To taste pepper
Instructions
- Prepare the chicken: Chop the chicken breasts into bite-sized pieces.
- Heat the oil: In a large skillet, heat the olive oil over medium heat.
- Cook the chicken: Add the chicken pieces to the skillet, season with salt and pepper, and cook for 6 to 7 minutes until golden brown.
- Add garlic and oregano: When the chicken is cooked, add the minced garlic and dried oregano, and cook for 1 minute.
- Prepare the orzo: Toss in the orzo pasta and stir well.
- Add broth and lemon juice: Pour in the chicken broth and squeeze in the lemon juice, then bring to a simmer.
- Cover and cook: Cover with a lid and cook for 10 to 12 minutes until the orzo is tender.
- Finish the dish: Remove from heat, stir in lemon zest, and serve warm.
Notes
Serve warm with a side salad or steamed vegetables. A sprinkle of fresh parsley or extra lemon zest enhances the presentation.
