  • 4 cups low-sodium chicken broth
  • 2 pieces fresh lemons (zest and juice)
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano
  • 2 tbsp olive oil (extra virgin)
  • To taste salt
  • To taste pepper

Instructions

  1. Prepare the chicken: Chop the chicken breasts into bite-sized pieces.
  2. Heat the oil: In a large skillet, heat the olive oil over medium heat.
  3. Cook the chicken: Add the chicken pieces to the skillet, season with salt and pepper, and cook for 6 to 7 minutes until golden brown.
  4. Add garlic and oregano: When the chicken is cooked, add the minced garlic and dried oregano, and cook for 1 minute.
  5. Prepare the orzo: Toss in the orzo pasta and stir well.
  6. Add broth and lemon juice: Pour in the chicken broth and squeeze in the lemon juice, then bring to a simmer.
  7. Cover and cook: Cover with a lid and cook for 10 to 12 minutes until the orzo is tender.
  8. Finish the dish: Remove from heat, stir in lemon zest, and serve warm.
