Description

A delicious twist on a classic appetizer, combining creamy avocado with hard-boiled eggs for a healthy and nutritious treat.

Ingredients

Scale
  • 6 hard-boiled eggs
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • Salt to taste
  • Pepper to taste
  • Optional: paprika or cilantro for garnish

Instructions

  1. Prepare the eggs: Cut the hard-boiled eggs in half lengthwise and gently remove the yolks into a mixing bowl. Set the egg whites aside on a serving platter.
  2. Mash the yolks with avocado: Cut the ripe avocado in half, remove the pit, and scoop the flesh into the bowl with the yolks. Add lime juice to prevent browning and enhance flavor. Blend until smooth.
  3. Season: Add salt and pepper to taste and adjust according to preference.
  4. Fill the egg whites: Use a spoon or a piping bag to fill each egg white half with the avocado mixture.
  5. Garnish: Sprinkle paprika or add fresh cilantro on top for flavor and presentation.
  6. Serve: Enjoy immediately or refrigerate for up to two days.

Notes

For best freshness, prepare the filling separately and combine just before serving. Store leftovers in an airtight container.
