Description

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin or use muffin liners.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Stir in the melted butter until combined.
  4. Add baking soda and a pinch of salt, mixing well.
  5. Mix in the sugar, beaten egg, and vanilla extract.
  6. Add the all-purpose flour, mixing gently until just combined.
  7. Fill the muffin tin, pouring the batter about 2/3 full in each cup.
  8. Bake for 18-20 minutes, checking with a toothpick for doneness.
  9. Cool the muffins slightly in the tin before transferring them to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor and sweetness. Customize with nuts or chocolate chips if desired.
