- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin or use muffin liners.
- Mash the ripe bananas in a mixing bowl until smooth.
- Stir in the melted butter until combined.
- Add baking soda and a pinch of salt, mixing well.
- Mix in the sugar, beaten egg, and vanilla extract.
- Add the all-purpose flour, mixing gently until just combined.
- Fill the muffin tin, pouring the batter about 2/3 full in each cup.
- Bake for 18-20 minutes, checking with a toothpick for doneness.
- Cool the muffins slightly in the tin before transferring them to a wire rack to cool completely.
Notes
Use very ripe bananas for the best flavor and sweetness. Customize with nuts or chocolate chips if desired.
