Ingredients

  • 2/3 cup olive oil
  • 1/3 cup cider vinegar
  • 1 tsp sugar
  • 2 1/2 tsp Italian seasoning
  • 3/4 tsp garlic powder
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 4 cups pasta (rotini or fusilli)
  • 1 medium red onion (finely diced)
  • 2 cups cherry tomatoes (halved)
  • 1 large cucumber (diced)
  • 1 1/2 cups small mozzarella balls
  • 1 1/4 cups salami (cut into cubes)
  • 3/4 cup kalamata olives (halved)
  • 1/3 cup fresh parsley (chopped)
  • 1 red bell pepper (diced)

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain and rinse under cold water.
  2. Prepare the dressing by whisking together olive oil, cider vinegar, sugar, Italian seasoning, garlic powder, salt, and pepper.
  3. Chop the red onion, halve the cherry tomatoes, dice the cucumber, and cube the red bell pepper.
  4. Combine the cooled pasta, chopped vegetables, mozzarella balls, and salami in a large bowl.
  5. Pour the dressing over the salad and toss gently to coat.
  6. Add the kalamata olives and parsley, and give one last gentle toss.
  7. Chill the salad in the refrigerator for at least one hour.
  8. Serve the salad cold, stirring before serving to redistribute the dressing.
