- 2/3 cup olive oil
- 1/3 cup cider vinegar
- 1 tsp sugar
- 2 1/2 tsp Italian seasoning
- 3/4 tsp garlic powder
- 3/4 tsp salt
- 1/2 tsp pepper
- 4 cups pasta (rotini or fusilli)
- 1 medium red onion (finely diced)
- 2 cups cherry tomatoes (halved)
- 1 large cucumber (diced)
- 1 1/2 cups small mozzarella balls
- 1 1/4 cups salami (cut into cubes)
- 3/4 cup kalamata olives (halved)
- 1/3 cup fresh parsley (chopped)
- 1 red bell pepper (diced)
Instructions
- Cook the pasta in salted boiling water until al dente, then drain and rinse under cold water.
- Prepare the dressing by whisking together olive oil, cider vinegar, sugar, Italian seasoning, garlic powder, salt, and pepper.
- Chop the red onion, halve the cherry tomatoes, dice the cucumber, and cube the red bell pepper.
- Combine the cooled pasta, chopped vegetables, mozzarella balls, and salami in a large bowl.
- Pour the dressing over the salad and toss gently to coat.
- Add the kalamata olives and parsley, and give one last gentle toss.
- Chill the salad in the refrigerator for at least one hour.
- Serve the salad cold, stirring before serving to redistribute the dressing.
