  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 cup cream cheese, softened
  • 1/4 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare a 15×10-inch jelly roll pan with grease or cooking spray and line with parchment paper.
  3. Mix the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg in a medium bowl.
  4. Beat the eggs and granulated sugar together until light and fluffy.
  5. Add the vegetable oil and vanilla extract to the egg mixture.
  6. Incorporate the grated carrots into the batter.
  7. Combine the dry mixture with the wet ingredients gradually.
  8. Spread the batter in the prepared jelly roll pan.
  9. Bake for 13 to 15 minutes until a toothpick comes out clean.
  10. Invert the cake onto a powdered sugar-sprinkled towel to cool.
  11. Roll the cake up with the towel while still warm.
  12. Make the frosting by beating together the cream cheese and butter, then gradually adding the powdered sugar and vanilla.
  13. Fill the cooled cake with an even layer of frosting.
  14. Re-roll the cake without the towel.
  15. Chill the rolled cake in plastic wrap for about 30 minutes before serving.

Notes

Grate carrots finely for a smoother texture. Use a flexible spatula when frosting for a smoother finish.
