Description

A delightful one-pot dish combining tender chicken, creamy coconut milk, and sweet potatoes, flavored with aromatic spices.


Ingredients

  • 1 pound chicken breast, diced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can coconut milk
  • 2 tablespoons curry powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Sauté onion and garlic until soft and translucent, about 3 to 5 minutes.
  3. Cook chicken until browned, about 5 to 7 minutes.
  4. Add curry powder and cumin, cooking for another minute.
  5. Incorporate sweet potatoes and coconut milk, stirring well.
  6. Simmer covered on medium-low heat for about 20 to 25 minutes until sweet potatoes are tender.
  7. Season with salt and pepper, and serve garnished with fresh cilantro.

Notes

This curry can be served over rice or with naan bread. Adjust spice levels to taste.
