- 2 medium sweet potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 teaspoon cumin

- 1 tablespoon oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium heat.
- Sauté onion and garlic until soft and translucent, about 3 to 5 minutes.
- Cook chicken until browned, about 5 to 7 minutes.
- Add curry powder and cumin, cooking for another minute.
- Incorporate sweet potatoes and coconut milk, stirring well.
- Simmer covered on medium-low heat for about 20 to 25 minutes until sweet potatoes are tender.
- Season with salt and pepper, and serve garnished with fresh cilantro.
Notes
