Description

Ingredients

  • 3 large ripe bananas, mashed
  • 2 large eggs
  • ⅓ cup maple syrup or honey
  • ¼ cup melted coconut oil or light olive oil
  • 1 teaspoon vanilla extract
  • 1½ cups whole wheat flour
  • ⅓ cup vanilla or unflavored protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • ½ cup dark chocolate chips (70% cocoa, no added sugar)
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9 x 5 inch loaf pan by greasing it and lining with parchment paper.
  3. Mash the bananas in a large bowl until smooth.
  4. Mix the eggs with the mashed bananas until combined.
  5. Add the maple syrup or honey, melted oil, and vanilla extract; stir until smooth.
  6. Combine the dry ingredients in a separate bowl and whisk them together.
  7. Gradually add the dry mixture to the wet mixture and stir gently.
  8. Fold in dark chocolate chips and nuts if using.
  9. Pour the batter into the prepared loaf pan and spread evenly.
  10. Bake for 50 to 55 minutes, checking for doneness with a toothpick.
  11. Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Use ripe bananas for better sweetness and flavor.
