- 3 large ripe bananas, mashed
- 2 large eggs
- ⅓ cup maple syrup or honey
- ¼ cup melted coconut oil or light olive oil
- 1 teaspoon vanilla extract
- 1½ cups whole wheat flour
- ⅓ cup vanilla or unflavored protein powder
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- ¼ teaspoon fine sea salt
- ½ cup dark chocolate chips (70% cocoa, no added sugar)
- ¼ cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 9 x 5 inch loaf pan by greasing it and lining with parchment paper.
- Mash the bananas in a large bowl until smooth.
- Mix the eggs with the mashed bananas until combined.
- Add the maple syrup or honey, melted oil, and vanilla extract; stir until smooth.
- Combine the dry ingredients in a separate bowl and whisk them together.
- Gradually add the dry mixture to the wet mixture and stir gently.
- Fold in dark chocolate chips and nuts if using.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50 to 55 minutes, checking for doneness with a toothpick.
- Cool the bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
