Ingredients

- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 and 1/2 teaspoons baking powder
- 1 and 1/2 teaspoons baking soda

- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
Instructions
- Preheat the oven to 350°F (175°C) and prepare the cupcake tray with liners.
- Mix the all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt in a large bowl.
- Add the eggs, milk, vegetable oil, and vanilla extract; mix on medium speed for about 2 minutes.
- Incorporate the boiling water into the batter until smooth.
- Fill each cupcake liner about two-thirds full with the batter.
- Bake for about 18-20 minutes or until a toothpick comes out clean.
- Cool the cupcakes for 10 minutes in the tray, then transfer to a wire rack to cool completely.
