- 8 oz (225g) elbow macaroni
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 2 cups milk (whole or 2%)
- 2 cups shredded sharp cheddar cheese
- 1/2 cup grated Parmesan (optional)
- Salt, to taste
- Black pepper, to taste
- Pinch of paprika or mustard powder (optional)
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, about 7-9 minutes. Drain the pasta and set aside.
- Prepare the roux: In a medium-sized saucepan, melt 2 tablespoons of butter over medium heat. Sprinkle in the flour, whisk together, and cook for about 1-2 minutes.
- Add the milk: Gradually pour in the milk while continuously whisking, cook for about 3-5 minutes until it thickens slightly.
- Incorporate the cheese: Lower the heat to medium-low and stir in the shredded cheddar and Parmesan (if using) until fully melted. Season with salt, black pepper, and optional spices.
- Combine with pasta: Add the cooked pasta to the cheese sauce and stir until evenly coated.
- Optional baking step: Transfer to a greased baking dish, sprinkle additional cheese or breadcrumbs on top, and bake at 375°F (190°C) for 15-20 minutes until golden brown.
Notes
For extra flavor, feel free to add ingredients like cooked bacon, broccoli, or jalapeños.
