- Hard boil the eggs: Start by placing the eggs in a single layer in a pot. Fill the pot with cold water until the eggs are submerged by about an inch. Turn the heat to high and bring the water to a rolling boil. As soon as it starts boiling, cover the pot with a lid and remove it from the heat. Let the eggs sit in the hot water for about 10-12 minutes.
- Cool them in ice water: After the time has elapsed, carefully transfer the eggs into a bowl filled with ice water. This step is crucial as it stops the cooking process and makes peeling easier. Leave the eggs in the ice water for at least 5 minutes.
- Peel the eggs: After the eggs are cool, gently crack the shell by tapping it on a hard surface. Roll the egg between your hands to loosen the shell, then peel it off under running water to help remove any stubborn bits.
- Slice and remove yolks: Carefully slice the eggs in half lengthwise. Use a small spoon to scoop out the yolks into a bowl. Make sure to keep the egg whites intact for filling.
- Make the filling: With the egg yolks in the bowl, add the mayonnaise, mustard, vinegar, salt, and pepper. Use a fork to mash the yolks and mix everything together until smooth. You can adjust the seasoning to your taste.
- Fill the egg whites: Now, you have two options: spoon the yolk mixture back into the egg whites, or for a fancier approach, use a piping bag or a plastic sandwich bag with the corner snipped off to pipe the filling.
- Garnish and serve: Finally, sprinkle paprika over the top of the filled eggs for a pop of color and flavor. Serve them chilled or at room temperature.
Notes
Using fresh eggs yields the best results. Avoid overcooking to prevent rubbery egg whites.
