- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon salt
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- 1/4 teaspoon baking powder
- Additional powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch square baking dish with butter or cooking spray.
- Make the crust by creaming together softened butter and powdered sugar in a mixing bowl.
- Add in all-purpose flour and salt, stirring until crumbly.
- Form the crust by pressing the mixture into the bottom of the prepared baking dish.
- Bake for about 15-20 minutes until lightly golden.
- Prepare the lemon filling by whisking together eggs, granulated sugar, lemon juice, lemon zest, and baking powder.
- Pour the lemon mixture over the warm crust and spread evenly.
- Bake again for another 20-25 minutes until set.
- Cool the bars completely and dust with powdered sugar before slicing.
Notes
For the best flavor, use fresh lemons. Don’t overbake to maintain a moist texture.
