  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Cook the chicken: Start by heating olive oil in a large skillet over medium heat. Add the diced chicken breast and cook until browned and cooked through for 6-8 minutes. Remove chicken and set aside.
  2. Sauté onion and garlic: In the same skillet, add chopped onion and minced garlic, sauté for 3-4 minutes until the onion becomes translucent.
  3. Cook the orzo: Add the orzo pasta and stir for a minute, then add 4 cups of water or chicken broth. Bring to a boil, then simmer for 8-10 minutes until the orzo is tender.
  4. Add spinach and cream: Stir in fresh spinach and heavy cream. Return the cooked chicken to the skillet and heat everything through for another 2-3 minutes.
  5. Season and serve: Adjust salt and pepper to taste, serve warm garnished with grated Parmesan cheese.
