  • 2 tablespoons olive oil, divided
  • 1 boneless, skinless chicken breast
  • Salt and black pepper, to taste
  • 1 teaspoon minced garlic
  • 1 cup broccoli florets
  • ½ cup diced zucchini
  • ¼ cup asparagus tips
  • ¼ cup diced green bell pepper
  • 8 cherry or grape tomatoes, halved
  • 1 tablespoon Italian seasoning
  • ¼ cup heavy cream
  • 1 tablespoon grated Parmesan cheese (for topping)

Instructions

  1. Cook the pasta by bringing a large pot of salted water to a boil. Add the fusilli pasta and cook until al dente, about 8 to 10 minutes. Drain and set aside.
  2. Prepare the chicken by slicing it into thin strips and seasoning with salt and black pepper.
  3. Cook the chicken in a skillet with 1 tablespoon of olive oil over medium heat for 4 to 5 minutes until golden and cooked through. Set aside.
  4. Sauté the minced garlic in the same skillet with the remaining olive oil for 30 seconds. Add broccoli, zucchini, asparagus, and bell pepper, and cook for 3 to 4 minutes until tender-crisp.
  5. Build the sauce by adding the cherry tomatoes and Italian seasoning, then pour in the heavy cream and simmer for about 2 minutes.
  6. Combine the chicken and drained pasta with the sauce and vegetables, tossing until everything is well-coated and heated through for 1 to 2 minutes.
  7. Serve immediately, garnished with grated Parmesan cheese.

Notes

For a lighter version, use half-and-half or a dairy-free cream alternative. Feel free to modify vegetables based on seasons or preferences.
