Description
A bright and healthy Fresh and Flavorful Rainbow Orzo Salad packed with colorful veggies, tangy lemon dressing, and simple goodness.
Ingredients
1 ½ cups orzo pasta
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cucumber, diced
1 cup cherry tomatoes, halved
¼ red onion, finely chopped
½ cup crumbled feta cheese
¼ cup fresh parsley, chopped
2 tbsp fresh basil, chopped
¼ cup extra-virgin olive oil
3 tbsp lemon juice
1 tsp Dijon mustard
Salt and black pepper to taste
Instructions
1. Cook orzo pasta in salted water until al dente.
2. Drain and rinse with cold water.
3. Chop all vegetables and herbs.
4. In a large bowl, mix orzo, veggies, and herbs.
5. Whisk together dressing ingredients.
6. Toss salad with dressing until evenly coated.
7. Chill for 15 minutes before serving.
Notes
You can replace feta with goat cheese or make it vegan by skipping cheese.
Store in refrigerator up to 3 days.
Best served chilled.
