Description

Delightful lemon bars that perfectly balance sweetness and tanginess, making them a refreshing dessert for any occasion.

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup lemon juice
  • 1 cup powdered sugar
  • 2 eggs
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract

Instructions

  1. Prepare the crust: In a medium-sized mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well mixed and press into a greased 8×8 baking dish.
  2. Make the lemon filling: In a separate bowl, whisk together lemon juice, powdered sugar, eggs, lemon zest, and vanilla extract until smooth.
  3. Combine and bake: Pour the lemon mixture over the crust evenly. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes until set but jiggly in the center.
  4. Chill and set: Let cool at room temperature for 30 minutes, then refrigerate for at least 2 hours.
  5. Cut and serve: Slice into squares, optionally dust with powdered sugar and garnish before serving.

Notes
