Description

A quick and easy one-pan lasagna that combines all the comforting flavors of traditional lasagna without the hassle, perfect for busy weeknights.


Ingredients

  • 9 lasagna noodles
  • 1 pound ground beef
  • 1 cup ricotta cheese
  • 2 cups marinara sauce
  • 2 cups colorful vegetables (like bell peppers, zucchini, and spinach)
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the ground beef in a large skillet over medium heat for 5 to 7 minutes until browned.
  2. Add the colorful vegetables and cook for another 3 to 5 minutes until softened.
  3. Prepare the lasagna noodles by breaking them into smaller pieces and adding them to the skillet.
  4. Pour the marinara sauce over the mixture and sprinkle the Italian seasoning on top.
  5. Let it simmer for about 20 minutes, covered, until noodles absorb flavors.
  6. Stir in the ricotta cheese and half of the shredded mozzarella.
  7. Melt the remaining mozzarella on top by covering and cooking for an additional 5 minutes.
  8. Season with salt and pepper, serve warm.

Notes

Garnish with fresh basil or parsley, and serve with a green salad or garlic bread.
