- 9 lasagna noodles
- 1 pound ground beef
- 1 cup ricotta cheese
- 2 cups marinara sauce
- 2 cups colorful vegetables (like bell peppers, zucchini, and spinach)
- 1 cup mozzarella cheese, shredded
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the ground beef in a large skillet over medium heat for 5 to 7 minutes until browned.
- Add the colorful vegetables and cook for another 3 to 5 minutes until softened.
- Prepare the lasagna noodles by breaking them into smaller pieces and adding them to the skillet.
- Pour the marinara sauce over the mixture and sprinkle the Italian seasoning on top.
- Let it simmer for about 20 minutes, covered, until noodles absorb flavors.
- Stir in the ricotta cheese and half of the shredded mozzarella.
- Melt the remaining mozzarella on top by covering and cooking for an additional 5 minutes.
- Season with salt and pepper, serve warm.
Notes
Garnish with fresh basil or parsley, and serve with a green salad or garlic bread.
