Description

A comforting and easy dish that combines chicken, rice, and vegetables in a creamy casserole, perfect for family dinners or using up leftovers.


Ingredients

  • 2 cups cooked rice
  • 2 cups cooked chicken, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup frozen peas and carrots
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine in a large mixing bowl the rice, shredded chicken, cream of chicken soup, and chicken broth.
  3. Add the shredded cheese, frozen peas and carrots, garlic powder, onion powder, and season with salt and pepper.
  4. Mix everything until well combined.
  5. Prepare a greased casserole dish with the mixture spread evenly.
  6. Bake in the preheated oven for 25-30 minutes until heated through and bubbly.
  7. Let it cool for a few minutes before serving.

Notes

Can be served with a side salad or crusty bread. This dish is great for using leftover chicken and rice.
