Ingredients

  • 8 oz orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the orzo according to package instructions, about 8-10 minutes until al dente. Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add 3 minced cloves of garlic and sauté for 1-2 minutes until fragrant.
  3. Add 1 lb of shrimp to the skillet and cook for 3-4 minutes until pink and opaque.
  4. Incorporate the halved cherry tomatoes and fresh spinach, cooking for an additional 2-3 minutes until spinach wilts.
  5. Mix in the cooked orzo, 1 teaspoon of lemon juice, and season with salt and pepper to taste. Combine gently.
  6. Serve hot, and top with freshly grated Parmesan cheese if desired.
