Ingredients

- 2 eggs
- 1 cup fresh spinach, chopped
- 1/4 cup feta cheese, crumbled
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil or butter
Instructions
- Whisk the eggs in a bowl until well combined, then season with salt, pepper, garlic powder, and oregano.
- Heat a non-stick skillet over medium heat and add olive oil or butter until melted.
- Sauté the chopped spinach for 1 to 2 minutes until wilted.
- Add the egg mixture over the sautéed spinach, spreading it evenly.
- Sprinkle crumbled feta cheese on one half of the omelet once the edges are set.
- Fold the omelet in half over the feta and let it cook for another 1 to 2 minutes.
- Plate the omelet and serve immediately.
Notes
Garnish with fresh herbs or serve with toasted bread or a side salad for a complete meal.
