Description

A delicious and healthy spinach and feta omelet that’s quick and easy to make, perfect for busy mornings or a light lunch.


Ingredients

  • 2 eggs
  • 1 cup fresh spinach, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. Whisk the eggs in a bowl until well combined, then season with salt, pepper, garlic powder, and oregano.
  2. Heat a non-stick skillet over medium heat and add olive oil or butter until melted.
  3. Sauté the chopped spinach for 1 to 2 minutes until wilted.
  4. Add the egg mixture over the sautéed spinach, spreading it evenly.
  5. Sprinkle crumbled feta cheese on one half of the omelet once the edges are set.
  6. Fold the omelet in half over the feta and let it cook for another 1 to 2 minutes.
  7. Plate the omelet and serve immediately.
