- 2 cups freshly diced strawberries

- ¾ cup all-purpose flour
- ¼ cup light brown sugar (packed)

Instructions
- Preheat your oven to 350°F (175°C).
- Line a 9×9-inch baking dish with parchment paper.
- Combine graham cracker crumbs, melted butter, and granulated sugar in a mixing bowl.
- Press the mixture into the bottom of the baking dish to form a crust.
- Beat cream cheese until smooth and creamy in a large bowl.
- Mix in the eggs, granulated sugar, vanilla extract, and kosher salt until combined.
- Fold in the freshly diced strawberries into the cream cheese mixture.
- Pour the mixture over the graham cracker crust and spread it evenly.
- Mix flour, light brown sugar, and kosher salt in another bowl.
- Stir in melted butter until crumbly; sprinkle over the cheesecake layer.
- Bake for about 35–40 minutes until the filling is set.
- Cool the dish at room temperature, then refrigerate for at least 1 hour before slicing.
Notes
For added flavor, try customizing by adding lemon zest or different fruits.
