Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 cups fresh strawberries, hulled and sliced

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Grease a 9-inch springform pan.
  3. Combine graham cracker crumbs, melted butter, and 1/4 cup of sugar in a bowl.
  4. Press the mixture firmly into the bottom of the springform pan.
  5. Beat the softened cream cheese until smooth and creamy.
  6. Add 1 cup of sugar and 1 teaspoon of vanilla extract; mix until fluffy.
  7. Add eggs one at a time, beating well after each addition.
  8. Stir in sour cream until smooth.
  9. Pour the cream cheese mixture over the crust.
  10. Bake for 55-60 minutes until the center is set.
  11. Cool on a wire rack and refrigerate for at least 4 hours.
  12. Top with sliced strawberries before serving.
